Vinification
The grapes are harvested by hand and macerated for 3 hours in a carbon dioxide atmosphere. Fermentation takes place in stainless steel tanks at a controlled temperature of 14–16 °C.
Ageing
The wine matures in stainless steel tanks for 3 months.
Serving and pairing
Suitable as an aperitif and with appetisers, fish and light dishes.
