Vineyard and terroir

The 3.5 ha Cerretta vineyard lies near Baudana in the commune of Serralunga d’Alba, at an altitude of 360 m. It forms a natural amphitheatre and has a south-east exposure, with clay-limestone and marl soils. The vines are planted at a density of 5,000 per hectare. Fruit is selected from plots on the lower part of the slope, where a grove provides shelter from strong winds and creates a favourable microclimate.

Vinification

The grapes are harvested by hand in the first half of August. Alcoholic fermentation takes place in concrete tanks with natural yeasts for approximately 29 days. Extraction involves periodic pump-overs and rack-and-return, together with daily wetting of the cap.

Ageing

The wine matures for 36 months in 25 hl French oak barrels and is bottled without filtration.
