Vineyard and terroir
Calderara Sottana is an Etna Rosso D.O.C. produced from a 1 ha selection in the Calderara Sottana cru at Randazzo. The vineyard lies at 700 m above sea level on Etna's northern slopes. Its approximately 65-year-old vines grow in sandy volcanic soil rich in minerals, at a density of 4,500 vines per hectare. The vines are trained as alberello and modified alberello on trellises. Yield is 30 q/ha, and the grapes are organically grown.

100% Nerello Mascalese.
Vinification
The grapes are harvested manually in the second half of October. Fermentation begins spontaneously with yeasts naturally present on the grapes and takes place at 28–30°C. Maceration on the skins lasts 15 days. Malolactic fermentation occurs spontaneously in spring.
Ageing
The wine matures for 18 months in used tonneaux, followed by at least six months in bottle.

Tasting profile
Deep ruby red. The highly complex bouquet features blackberry, redcurrant and sour cherry, seamlessly joined by Mediterranean herbs. Broad and notably elegant on the palate, with an acidic line that gives freshness and vibrancy. It has excellent structure and a notably persistent finish.
