Vineyard and terroir
Piano delle Colombe is a San Lorenzo cru from Contrada San Lorenzo in Randazzo, on Etna’s northern slopes. It comes from a 0.70 ha selection planted at 750 m above sea level. The volcanic, sandy soil is rich in minerals. The vines are more than 80 years old, with a density of 5,500 plants per hectare, and are trained as modified alberello on espalier. Yield is 20 q/ha (2,000 kg/ha).
Grapes
100% Nerello Mascalese.
Vinification
The grapes are harvested manually during the final week of October. Fermentation takes place in open vats at 28–30 °C and lasts approximately 10 days, using indigenous yeasts. Skin maceration continues for 18 days. Malolactic fermentation occurs spontaneously in spring.
Ageing
The wine matures for 18 months in one 500 L oak tonneau and one second-use barrique, followed by at least 12 months in bottle.
