Vineyard and terroir

The Nerello Mascalese is selected from eight hectares, predominantly in Contrada San Lorenzo on Etna’s northern slopes. The 80-year-old vines stand at 700 metres in sandy, mineral-rich volcanic soil. Planting density is 5,500 vines per hectare, using alberello and modified alberello trained on trellises. Yield is 50 quintals per hectare.

Grapes

100% Nerello Mascalese.

Vinification

Harvest takes place by hand in the first days of October. Whole bunches remain in contact with their skins for the duration of pressing, approximately five hours. Fermentation is spontaneous, driven by yeasts naturally present on the grapes, at 15°C. The wine does not undergo malolactic fermentation.

Ageing

Six months in stainless steel.

Etna Rosato D.O.C. Alcohol: 12.5%. Production: 15,000 bottles.

Tasting profile

Powder pink in colour. Aromas of cherry, strawberry and raspberry are accented by white pepper. The palate is fresh and savoury, with the variety’s well-defined acidity bringing harmony, persistence and precise definition.
