Vineyard and terroir
The grapes grow at the Caselle estate in the municipality of Milo, 750 m above sea level, 10 km from Etna’s central crater and 8 km from the Ionian Sea. The vines were planted in 2010 and 2015 in sandy volcanic soils, which contribute mineral character.
Vinification
The grapes are harvested entirely by hand, usually during the first ten days of October. Whole bunches are pressed directly, after which the juice settles for 30 hours. Fermentation with native yeasts lasts 15–20 days. The wine is filtered only during bottling, with sulphur added in very small quantities. Natural settling and bottling are timed according to the lunar calendar.
Ageing
The wine rests in steel tanks for six months and is bottled in late April or early May of the year following the harvest.

Delicate and light yet complex, with mineral finesse.
Label / history
“Aurora” means “dawn” in Italian and is also the name of a small, graceful yellow butterfly found on Etna. Now endangered, the butterfly appears on the label. The wine is bottled in custom glass bearing the winery’s logo: a hundred-year-old vine associated with 1435, when Etna’s historic winegrowers’ association, the “Maestranza dei Vigneri,” was founded in Catania.
