Vineyard and terroir
The grapes come from the winery’s own vineyards on the northern slope of Mount Etna, around 700 m above sea level. The vines average 20 years of age and grow in volcanic soils rich in nutrients and minerals. All vineyard work is performed by hand; copper and sulfur are used only when necessary.
Vinification
The grapes are harvested entirely by hand at optimal ripeness. Whole bunches are crushed by foot, fermented without temperature control and macerated on their skins for seven days in a large concrete vat. The must is then pressed in an old manual press, and the wine is strained through a wooden basket separator. It is filtered only at bottling, with no sulfur dioxide added.
Ageing
The wine ages for 12 months in amphorae buried underground. Bottling follows the cycles of the lunar calendar.
Label / history
The wine is produced at Palmento Caselle, a traditional winemaking site on Mount Etna. I Vigneri’s custom glass bottle bears the company logo, depicting a century-old grapevine. The symbol dates to 1435, when the historic Etna winegrowers’ association “Maestranza dei Vigneri” was founded in Catania.
