Vineyard and terroir

The grapes come from Alto Salento, between Sava and Manduria, in the heart of the Primitivo di Manduria production zone. Sunshine and proximity to the Ionian Sea are important influences. The traditional bush-trained alberelli are more than 30 years old.

Grapes

100% Primitivo.

Vinification

Slightly overripe grapes are destemmed and crushed. Controlled-temperature maceration lasts 10–12 days with regular pump-overs. After draining, malolactic fermentation takes place in stainless-steel tanks.

Ageing

The wine matures for 12 months in American and French oak barriques.

Tasting profile

Ruby red with violet at the rim. The intense bouquet offers cherry and blackberry, mint tobacco and light spice. Spicy flavours lend a gently sweet impression to the palate, followed by cocoa and coffee. The finish is persistent, and the wine can continue developing for 10 years.

Serving and pairing

Serve at 16–18°C. Pair with the meat-based cooking of Puglia, game and mature sheep’s-milk cheese.
