Vineyard and terroir
The old vineyard lies in the commune of Serralunga d'Alba and has a southerly position that creates a favourable microclimate.
Vinification
The grapes are harvested by hand in the first half of October and sorted during picking, destemming and pressing. Fermentation and maceration last 16–20 days with native yeasts. Malolactic fermentation continues from autumn until the following spring.
Ageing
The wine matures in French oak barrels for at least 36 months, followed by two years in bottle before release.
Tasting profile
Elegant, velvety and deep on the palate, with a vivid bouquet.
Serving and pairing
Serve in a large wine glass with meat dishes at dinner. It is particularly suited to colder weather, from late autumn through winter.
