Vineyard and terroir
The fruit is selected from the hills of Conegliano Valdobbiadene. Harvest takes place manually into crates between late August and early September, with two stages of selection: first on the vine and then at the winery.
Vinification
The selected grapes undergo gravity-fed white vinification off the skins at a controlled 15–18°C. Secondary fermentation and maturation on selected yeasts normally continue for approximately 90 days in pressure tanks at 13–14°C. Bottle pressure is 5.0 atm.
Ageing
Following approximately 90 days in pressure tanks, the wine rests for about one month before release.
Technical data
Conegliano Valdobbiadene Prosecco Superiore DOCG Extra Dry. Alcohol is 11.5% and residual sugar is 13 g/L. Available in a 0.75 L bottle.
Tasting profile
Pale yellow with straw-coloured highlights and abundant, continuous bubbles. The soft, clearly defined aroma combines green apple, plum, pear and apricot with jasmine, acacia and wisteria. The palate is lean and dry despite an initial impression of sweetness, then subtle and harmonious, with fresh fruit pulp remaining prominent. The balanced, intense finish is persistent.
