Questo vino
Vineyard and terroir
The grapes come from favored sites on the valley floor around the center of Cortina s.s.d.v. The vines are grafted onto low-vigor rootstocks and trained to Guyot on wire trellises. Sunshine and good air circulation around the berries support even, healthy ripening.
Grapes
Chardonnay. Alto Adige DOC.
Vinification
The grapes remain in contact with their skins for a few hours before pressing to emphasize fruit character. They are then gently pressed, and the must is clarified by natural sedimentation. Alcoholic fermentation proceeds with selected pure yeast strains at a controlled 19 °C.
