Vineyard and terroir

The fruit comes from selected individual vineyards in Giatl, on the valley floor around the centre of Cortina s.s.d.v. The vines are grafted onto slow-growing rootstock and Guyot-trained on wire trellises. Sandy alluvial soils contain calcareous gravel. Ample sunshine and good ventilation of the berries support even ripening in this valley-floor setting.

Grapes

Pinot Grigio. Alto Adige DOC. Yield is 45 hl/ha.

Vinification

The grapes are crushed and destemmed into a pneumatic tank press. A brief cold maceration precedes gentle pressing to enhance fruit expression. The must is clarified through natural sedimentation, and alcoholic fermentation takes place in small and large French-oak casks.

Ageing

The wine spends 12 months ageing and maturing on its lees in small and large French-oak casks, followed by 6 months in stainless steel. Several further months of bottle ageing complete the maturation before release.

Tasting profile

The colour ranges from straw yellow to golden yellow. Its powerful, fruit-led bouquet combines ripe pear and tropical fruit with fine wood notes. The palate is powerful, balanced and savoury, with an engaging play of acidity, harmonious juiciness and generous fullness. The rich bouquet and balanced structure allow further development in bottle.

Serving and pairing

Serve at 10–12 °C with appetizers, fish or vegetable-based main courses, and white meats. Cellaring potential is 6–8 years.
