Vineyard and terroir
The wine comes from selected terraced vineyards in Buchholz, on the valley slopes above Salorno in the southern Alto Adige lowlands. The vineyards range from 400 to 800 m above sea level and lie over dolomite sedimentary rock. Buchholz is morphologically and pedoclimatically varied, providing a distinctive setting for Chardonnay.
Temperatures in the higher sectors are approximately 6 °C cooler than on the valley floor. From April through October, the area is regularly ventilated by two winds: the warm southerly Ora in the afternoon and a cool northerly breeze in the morning.
Grapes
Chardonnay. Alto Adige DOC. Yield is 60 hl/ha.
Vinification
The grapes remain in contact with their skins for several hours before pressing to emphasize fruit character. They are then gently pressed, and suspended solids are removed by natural sedimentation. Alcoholic fermentation proceeds with selected pure yeasts at a controlled temperature of 19 °C in large wooden barrels.
Tasting profile
Greenish yellow in colour. The broad fruit spectrum centres on ripe banana and pineapple. The palate is fresh, juicy and mineral, with pleasant fullness and an inviting, persistent finish.
Serving and pairing
Serve at 10–12 °C. The wine is versatile at the table, accompanying first courses from vegetable minestrone to spaghetti with clams, as well as fish and white meat. Cellaring potential is 3–4 years.
