Vineyard and terroir
The Gewürztraminer vines are grafted onto slow-growing rootstock and Guyot-trained on traditional wire trellises. They grow in preferred vineyard zones on the valley floor around the centre of Cortina s.s.d.v., rooted in calcareous gravel with clay. Good solar exposure and ventilation of the berries favour aromatic development.
Grapes
Gewürztraminer. Alto Adige DOC. Yield is 50 hl/ha.
Vinification
The grapes are crushed and destemmed into a pneumatic tank press. Cold maceration lasts 6–8 hours before gentle pressing, emphasizing the wine's fruit character. The must is clarified by natural sedimentation. Alcoholic fermentation uses selected pure yeast strains at a controlled temperature of 19 °C.
Tasting profile
The intensely luminous colour ranges from straw yellow to golden yellow. The aromatic bouquet offers spicy tones, sweet Muscat-like nuances, dried flowers, cloves and rose petals. Full-bodied and richly aromatic, the palate is spicy, fresh and lively, with soft, pleasant acidity.
Serving and pairing
Serve at 10–12 °C. Pair with crab, lobster, other shellfish or pâtés, or pour as an aperitif. Cellaring potential is 5–6 years.
