Vineyard and terroir
The Sauvignon Blanc grows at 450 m in Pochi di Salorno. The vines are grafted onto low-vigor rootstocks and trained to Guyot on traditional wire trellises. Warm days, cool nights, a favorable vineyard position and restrained yields support even ripening.

Vinification
The grapes are crushed and destemmed into a pneumatic tank press. An 8–10-hour cold maceration enhances their fruit character. Gentle pressing is followed by clarification through natural sedimentation. Alcoholic fermentation proceeds with selected yeasts at a controlled 19 °C.

Tasting profile
Greenish yellow to straw yellow in color. The aromatic profile combines nettle, honey, bell pepper and elderflower. The palate is rich and harmonious, with clear fruit and persistent acidity. Its acidity also supports further development during cellaring.
Serving and pairing
Serve at 10–12 °C with appetizers, asparagus, fish dishes or vegetable soups. Cellaring potential is 3–5 years.
