Vineyard and terroir

The fruit comes from vineyards immediately surrounding the winery at an elevation of 450 m. The hills have calcareous clay and gravelly soils. Yield is 50 hl/ha.

Grapes

Pinot Noir. Alto Adige DOC.

Vinification

The grapes are destemmed immediately and fermented for about seven days at a constant 26–28 °C. Circulation pumping and gentle pressure from below maintain contact between must and skins, extracting colour while preserving the wine’s fruit character. Two gentle rackings follow.

Ageing

Half of the wine matures for several months in large French oak barrels. The other half ages in 2–3-year-old French oak barriques. After blending and bottling, the wine rests for several additional months before release.

Tasting profile

The colour ranges from ruby red to garnet red. Aromas evoke berries and sour cherries, with a mature, seductive character. The palate is harmonious, soft and full-bodied, with abundant fruit, a velvety texture and an elegant overall profile.

Serving and pairing

Serve at 16–18 °C with red meats, lamb, fowl or game. Cellaring potential is 5–6 years.
