Vineyard and terroir

Vigna Kofl lies beside Koflhof farm in Aldino, in the southern part of Alto Adige, at 1,030 m. The vineyard faces south and is rooted in porphyry accompanied by dolomitic carbonate minerals. Strong sunlight and the daily southerly Ora wind aid berry ripening at this high-altitude site.

Vinification

The bunches are destemmed immediately. Fermentation lasts about seven days at a constant 26–28 °C. Pump-overs and gentle pressure from below keep the must in contact with the skins, promoting color extraction while preserving the fruit character. Two gentle rackings follow fermentation.

Ageing

The wine matures for more than 12 months in French oak barriques and then for another six months in stainless-steel tanks. It is blended and bottled, followed by six months of bottle ageing before release.

Tasting profile

Intense, brilliant ruby red. The bouquet is refined and generous, with berry and sour-cherry notes. The palate is harmonious, rounded and soft yet compact, with an elegant structure and abundant berry fruit. Overall, it is mellow, balanced and inviting, with a clearly defined fruity character.

Serving and pairing

Serve at 16–18 °C with red meat, lamb, poultry, game or fresh cheese. It can cellar for at least 10 years.
