Vineyard and terroir
The Sangiovese grows at 300 m above sea level, while the Merlot and Colorino come from vineyards at 150 m. The sites face south and southwest. Their medium-textured soils are rich in marl and alberese limestone. Yield is approximately 2 kg per vine.
Grapes
Sangiovese 80%, with Merlot and Colorino making up the remaining 20%.
Vinification
The varieties are harvested by hand into small crates at separate stages of ripeness: Merlot in early September, Colorino around the middle of September, and Sangiovese from late September into early October. Traditional red-wine vinification takes place in small stainless-steel tanks. Fermentation is maintained at 28°C with frequent pumping over, and maceration lasts about 18 days.
Ageing
The wine matures for approximately six months in 25 hl French oak barrels, followed by at least six months in bottle.
