Vineyard and terroir
Diamanti comes from the mineral-rich land around Butera in central-southern Sicily. Its name and diamond imagery connect the intensity and brightness of the wine with the area’s precious mineral deposits.
Grapes
100% Grillo.
Vinification
Grapes harvested at full ripeness are gently pressed. The must ferments in stainless-steel tanks at a controlled 16–18 °C.
Ageing
The wine remains on its lees for 4–6 months, followed by a few months of bottle ageing.
Technical data
Grillo Sicilia DOC. Alcohol: 12.5% vol. Available in 750 ml bottles.
Tasting profile
Light, bright straw-yellow with gentle greenish reflections. The broad, notably fresh bouquet features citrus, pineapple and a light menthol note; the introductory profile also highlights passion fruit. The palate is complex and harmonious, with a clearly savoury line and pronounced minerality.
Serving and pairing
Serve at 10–12 °C. Pair with vegetable-based first courses and light dishes of cooked or raw fish.

The name likens the Grillo’s intensity and brilliance to a rare diamond, reflecting its origins in the mineral-rich soils of Butera.
