Vineyard and terroir

This traditional-method blanc de noirs comes from an approximately 3 ha vineyard facing the estate’s ancient baglio in Butera, central-southern Sicily. The calcareous-clay soil contains gravel and pebbles. The spurred-cordon vines are more than 30 years old, planted at 4,300 vines/ha, with a yield of 60 q/ha.

Grapes

100% Nero d’Avola, vinified as a blanc de noirs.

Vinification

The 2019 harvest took place during the third week of August. Grapes were picked manually into 14 kg crates, pressed gently, and the must was cold-settled for 12 hours. Primary fermentation took place in stainless steel, followed by eight months on fine lees.

Secondary fermentation in bottle was followed by horizontal storage for 24 months on the lees in underground cellars. Riddling was performed manually on pupitres. The finished wine received zero dosage.

Ageing

Eight months on fine lees after primary fermentation, followed by 24 months on the lees during traditional-method bottle ageing.

Tasting profile

Straw yellow with platinum reflections and a fine, persistent perlage. Delicate citrus and peach aromas are joined by custard and sweet almond. The palate is creamy yet crisp, with pronounced minerality and a persistent finish.

Serving and pairing

Serve at 8 °C. Pair with raw seafood, vegetable crudités and olive-oil dips, mature cheeses, or savoury Mediterranean dishes.

Vintage notes

A cool spring with below-average temperatures gave way to a summer alternating rainfall and dry spells, with temperatures remaining near seasonal norms. The absence of major heat spikes enabled even Nero d’Avola ripening while preserving the high acidity required for traditional-method sparkling wine.
