Vineyard and terroir

Serò comes from limestone-rich vineyards at 350 m above sea level in Butera, central-southern Sicily. It was created through research devoted to expressing the local Insolia variety as a fine white capable of developing over time.

Grapes

100% Insolia.

Vinification

The finest bunches are picked at first light and held in refrigerated rooms for three days to preserve their aromatic character. Gentle pressing is followed by fermentation divided equally between wood and stainless steel.

Ageing

The wine remains on its full lees for approximately eight months, with weekly bâtonnage, before the two components are assembled. Bottle ageing continues for a further 6–8 months.

Tasting profile

Bright, pale golden straw yellow with subtle green reflections. The broad, sophisticated bouquet combines mineral and floral tones—particularly broom—with apricot and pear. A light mentholated balsamic accent and white pepper emerge at the close. The palate is fresh, intense and persistent, ending with marked minerality that echoes the bouquet.

Serving and pairing

Serve at 10–12 °C. Pair with fresh cheeses and raw seafood.

Label / history

The name Serò derives from the ancient Greek expression σου ἐρῶ, meaning “I love you,” and presents the wine as an act of devotion to Insolia.
