Vineyard and terroir
The wine is assembled from the best grapes selected across estate vineyards in the Gaiole in Chianti area. It has no dedicated vineyard: the selection is intended to express the diversity of the local terroir. The contributing plots lie between 350 and 480 metres above sea level and have various exposures. Their medium-textured soils are rich in rock fragments, with Alberese and Galestro predominating and limestone occurring to a lesser extent. Vines are 10–35 years old, planted at 5,000 vines per hectare and trained to spurred cordon or Guyot. Average yield is 1 kg per vine.
Grapes
Sangiovese with small additions of Foglia Tonda and Pugnitello.
Vinification
Harvest takes place in the second half of September. Maceration lasts approximately 10–12 days at about 28°C, followed by malolactic fermentation in stainless steel.
Ageing
The wine matures for 12 months in large barrels and 6 months in cement, followed by one year in bottle.
Technical data
Annual production is approximately 20,000 bottles.
Tasting profile
Intense, bright red in colour. The profile combines complexity, structure and elegance with generous fruit. Small red berries and spices lead the aroma, developing into enveloping and persistent notes of cherry and ripe Morello cherry. The finish is spicy and balsamic, while bottle maturation brings greater elegance and a supple, persuasive texture.
Serving and pairing
Serve at 16°C with substantial roasts, game, mature cheeses or vegetable soups.
