Tempi comes from a 4 ha alberello-trained vineyard at 600 m above sea level.
Grapes
Sangiovese.
Vinification
The grapes are harvested manually between the beginning and middle of October. Malolactic fermentation takes place in tonneaux.
Ageing
The wine matures for 12 months in amphora and another 12 months in cement, followed by approximately 20–24 months in bottle. It is bottled without filtration and may therefore develop a natural tartrate sediment.
