Vineyard and terroir

The grapes come from Vigna Cappella S. Stefano in Perno, within Monforte d’Alba in the province of Cuneo. The vineyard is farmed sustainably with the aim of reducing fungicide use. Vines are Guyot-trained at a density of 4,000 plants per hectare, with yields of 45–50 quintals per hectare.

Vinification

Fermentation takes place at a controlled temperature with the wine in contact with the skins.

Ageing

The wine matures for approximately 30 months in wood, followed by about 12 months of bottle ageing before release.

Technical data

Available formats are 0.75 L, 1.5 L and 3 L. Its expected cellaring life exceeds 30 years. The technical figures represent averages across several years and may vary with the vintage.

Tasting profile

The wine is vivid and healthy in appearance, with notable transparency. Its colour moves from carmine toward garnet and an almost brick-like shade reminiscent of old terracotta roof tiles. Clearly defined arches and tears indicate an especially fluid texture.

The bouquet is refined, composed and harmonious. Fruit, flowers, spice and balsamic nuances form a precise aromatic whole. Fine spice accompanies the floral and fruity elements, while a restrained touch of vanilla contributes roundness and softness.

The palate balances soft, velvety tannins with delicate freshness. Generous, continuous salivation reflects well-integrated savouriness. The tannins merge smoothly with the wine’s other components, creating a rounded, coherent and elegant texture. Alcohol provides enveloping warmth without burning. The finish is exceptionally persistent, long and refined, led by dried aromatic herbs with an almost balsamic character and a subtle, measured spicy note. The overall profile combines power and elegance, structure and drinkability.
