Vineyard and terroir

The fruit comes from various vineyards belonging to Podere Rocche dei Manzoni in Monforte d’Alba, Cuneo. Viticulture is sustainable and directed toward reducing fungicide use. The vines are Guyot-trained at a density of 4,000 plants per hectare, with a reported yield of 60 q/ha.

Grapes

A blend of Chardonnay and Sauvignon. The proportions are not specified. Tataya is a vintage-dated wine, first produced in 2013.

Vinification

Immediately after pressing, the must is transferred to cement, where fermentation takes place.

Ageing

The wine continues to mature in cement before bottling. It does not undergo oak ageing.

Tasting profile

Pale straw yellow of medium intensity, with good consistency in the glass and a balanced structure. The clean, precise bouquet centers on white fruit and white flowers, especially white peach, loquat and elderflower. A delicate vegetal nuance reflects the Sauvignon component, while the Chardonnay and Sauvignon are well integrated.

The palate is driven by pronounced acidity and freshness, with generous salivation and a pleasant savory character. The finish is almost almond-like, accompanied by a light vegetal sensation. Persistence is good, with moderate length, balance and considerable versatility.

An additional organoleptic description identifies acacia and hawthorn flowers, Golden Delicious apple, loquat, almond and a touch of exotic fruit among the aromas. White flowers and fresh fruit return on the palate, where freshness, fullness and salinity remain balanced.
