Vineyard and terroir
The wine comes from 30 ha in Saline and Colombare di Lazise, in the hills of the Bardolino Classico area beside Lake Garda. The vineyards stand on glacial morainic soil and are managed under certified organic farming.
Grapes
Corvina, Corvinone and Rondinella. The vines are trained to a free spurred-cordon system at a density of 3,500–4,000 plants per hectare.
Vinification
The grapes are carefully selected and mechanically harvested between late September and early October. Soft crushing is followed by red-wine fermentation at controlled temperature.
Technical data
Alcohol: 13% vol. Total acidity: 5.8 g/L. Residual sugar: 5.7 g/L. The wine is bottled in the 750 ml Sophia format.
Tasting profile
Ruby red. The fresh, fruity bouquet recalls plum and cherry. The palate is rounded, harmonious and pleasant, with notable freshness and acidity.
Serving and pairing
Serve at 15–16 °C with risotto, pasta, tortellini, cheeses, light dishes or meat. Chestnuts are suggested as an autumn pairing. Intended to be enjoyed young.
