Vineyard and terroir
The fruit comes from 30 ha in Saline and Colombare di Lazise, in the hills of the Bardolino Classico area beside Lake Garda. The vineyards occupy glacial morainic soils and are farmed under certified organic practices.
Grapes
Corvina and Rondinella. The vines are trained to a free spurred-cordon system at a density of 3,500–4,000 plants per hectare.
Vinification
The grapes are selected and picked by hand, then softly crushed. Traditional rosé vinification includes brief overnight contact with the skins, followed by fermentation at controlled temperature.
Technical data
Alcohol: 13% vol. Total acidity: 5.8 g/L. Residual sugar: 5.5 g/L. Presented in a 750 ml Sophia bottle.
Tasting profile
Pale pink. The bouquet is fresh and delicate, recalling peach, apricot and marasca cherry. The palate is dry, harmonious, lively, savoury and pleasant.
Serving and pairing
Serve well chilled at 9–10 °C. Suitable as an aperitif and with starters, pasta, pizza, vegetables, mozzarella and fish. Sushi is also specifically suggested. Intended to be enjoyed young.
