Vineyard and terroir
The vineyards lie in the Sot lis Rivis area.
Vinification
The grapes are harvested as late as possible. Once ripe, Pinot Grigio loses moisture if left on the vine, which concentrates the fruit flavours. The wine is made by a traditional white-wine method. The whole clusters are gently pressed and fermented with selected yeasts at a controlled 19 °C. Malolactic fermentation is prevented.
Ageing
The wine is aged for 12 months in 25-hectolitre oak casks, which give it an aromatic structure the variety does not have on its own. It then spends a short time ageing in bottle in the winery's cellars before release.
Tasting profile
Rich and complex, with a bright aroma and citrus notes that are unusual for Pinot Grigio. The palate is full-bodied, with low acidity and a high alcohol level, well balanced by gently sweet fruit flavours.

The wine takes its name from the Sot lis Rivis area, where the vineyards are located.
