Vineyard and terroir
The vineyards lie between Peschiera del Garda and Desenzano, south of Lake Garda, at 70–80 m above sea level. The soils are Cretaceous, with clay and silt. Vines average 40 years old and are Guyot-trained with 8–10 buds per plant. Yield is 120 quintals per hectare.
Grapes
100% Trebbiano di Lugana.
Vinification
The grapes are selected manually during the final ten days of August. Must obtained by pressing whole bunches ferments with yeasts in stainless-steel vessels at a controlled 16 °C before the prise de mousse.
Ageing
The wine matures on its lees in bottle for approximately 32 months. Autolysis during this period develops additional aromatic complexity. The bottles undergo remuage and disgorgement to remove sediment, after which the liqueur d’expédition is added. The finished wine rests for at least another month before release.
Tasting profile
Intense straw yellow with golden highlights, creamy foam and a fine, elegant, persistent perlage. The clear, enveloping aroma combines white flowers, pear and apple with peach and citrus nuances and a lightly powdery character. The palate is balanced, lively and delicate, with a silky line of acidity that brings freshness and a clean finish.
Serving and pairing
Serve at 7–8 °C. Pair with raw seafood, delicate risotto and roasted white meats.
