Vineyard and terroir
The Primitivo comes from low-yielding bush-trained vines more than 70 years old in Salento, Puglia. The vines grow in red earth rich in iron oxides over a layer of calcareous rock.
Grapes
100% Primitivo.
Vinification
Slightly overripe grapes are destemmed and crushed. Fermentation and maceration proceed at controlled temperature for 10–12 days, with regular pump-overs. After draining, malolactic fermentation takes place in stainless-steel tanks.
Ageing
The wine matures for 12 months in American and French oak barriques.
Tasting profile
Ruby red with a purple rim. The intense bouquet combines cherry and blackberry with mint tobacco and gentle spice. Sweet-toned spice shapes the palate, while cocoa and coffee emerge on the finish. The wine is persistent and can continue developing for 10 years.
Serving and pairing
Serve at 18°C. Pair with curries and spicy barbecued meat, including beetroot curry (thel-dala), or with lentils stewed in wine and served with smoked cottage cheese.
