Vinification
The grapes undergo meticulous selection before spontaneous alcoholic fermentation. Vinification includes skin maceration and a subsequent period with the cap submerged. The wine is then racked into wood, where malolactic fermentation is completed.
Ageing
After its time in wood, the wine rests for approximately one further year in bottle to attain its full expressive maturity.
Tasting profile
Liquorice and a light smoky accent accompany floral aromas led by dried rose. The palate is delicate yet persistent, with sustained aromatic length and well-balanced tannins.
