Vineyard and terroir
The fruit comes from the ancient vineyards of Masseria Surani in the Salento region. The Guyot-trained vines are cultivated organically on limestone-based soils rich in iron. Naturally low yields and hand harvesting characterize the vineyard work.
Grapes
100% Primitivo di Manduria.
Vinification
Fermentation lasts 15–18 days at 25–28°C. The cap is punched down three times per day until alcoholic fermentation is complete.
Ageing
The wine matures for 15–18 months in large oak casks and barriques, followed by six months in bottle.

Alcohol: 15% vol. Bottle size: 750 ml.
Tasting profile
Deep ruby red with purple reflections. The bouquet combines blueberries, black cherries and plums with pepper, chocolate and sweet cinnamon. The palate is complex and full-bodied, framed by elegant, velvety tannins and ending with a tangy, very long finish.
Serving and pairing
Serve at 16–18°C. Its substantial body suits strongly flavored and spicy food, including pasta with meat sauce, meatballs in tomato sauce, red meat, pork and very mature cheeses.
Label / history
The name is dedicated to Dionysos, the Greek god of wine.
