Vineyard and terroir
The Riserva is made only in outstanding years from selected parcels of the oldest vineyards in Sant’Ambrogio di Valpolicella, in the heart of Valpolicella Classica. The hillside vineyards lie at 300–350 m, face south-east and south-west, and have predominantly chalky, calcareous soils rich in stones. The Guyot-trained vines average 30 years of age, with approximately 5,000 vines per hectare and 6–7 buds per plant. Yield is 80 quintals per hectare.
Grapes
85% Corvina, 10% Rondinella, 5% Oseleta and Croatina.
Vinification
Harvest extends from the first ten days of September to the first ten days of October. The fruit is picked and selected by hand into small 5 kg crates, then dried for about four months in dry, well-ventilated fruttai. The dried grapes are crushed in January and undergo a slow 15–20-day fermentation on the skins.
Ageing
The wine matures for approximately five years in large Slavonian oak casks, followed by at least one year in bottle.
Technical data
The 2019 release has 16.5% alcohol. Available formats include 750 ml and Magnum.
Tasting profile
Deep, luminous ruby red develops garnet tones with age. The mature, expansive bouquet combines cherries in spirit, dried plum and figs with tobacco, leather, sweet spices, liquorice and balsamic nuances. Full, deep and balanced on the palate, it has soft tannins, well-integrated warmth and notable freshness. The long, harmonious finish recalls ripe fruit and spices.
Serving and pairing
Serve at 18°C and open at least one hour beforehand. Pair with roast game, grilled red meat and mature cheeses, or serve alone as a meditation wine. Its structure and balance support ageing beyond 20 years.

Bearing the signature of founder Sergio Zenato, this is the estate’s emblematic Riserva and an expression of its experience and Valpolicella tradition.
