Vineyard and terroir
The fruit comes from vineyards in Cavrega di Torbe di Negrar and Casal di Marcellise, at elevations of 230–450 m above sea level.
Grapes
The grapes are selected before vinification.
Vinification
The grapes are harvested by hand at optimal ripeness, then dried in the cellar for 3–4 months on wooden surfaces without forced ventilation. Spontaneous fermentation takes place in a steel pied de cuve.
Ageing
The wine matures for five years in 500 L oak tonneaux, followed by two years in bottle.
