Vineyard and terroir
La Fornace comprises just over 1 ha planted in 1975. The vineyard receives abundant sunshine and, because it lies closer to Greve, has a greater proportion of sand in its soil. The ground is otherwise dominated by the area’s characteristic grey clay, traditionally used to make bricks. The Sangiovese grown here naturally resembles that of the right bank of the Greve River in character.
Grapes
American rootstocks were planted by hand and later grafted with Sangiovese sourced from other Villa Calcinaia vineyards.
Tasting profile
Highly aromatic and graceful, with fine, elegant tannins.
Serving and pairing
Pairs with rich meat dishes, fish and goat’s cheese.
Label / history
The Toti family had managed the Fornace farm since the beginning of the twentieth century. In 1975, the brothers Natale, Renato and Adolfo Toti agreed with its new owners to plant the vineyard. Each planting hole was dug by hand and, in the brothers’ words, had to be as tall as a man. The name Fornace, meaning “kiln,” refers to the vineyard’s brick-making grey clay.
