Terroir
Location and formation
Villa Chiopris is associated with the Grave del Friuli area of Friuli Venezia Giulia, at the foot of the Collio hills. Its vineyards extend through the municipalities of Chiopris-Viscone and San Giovanni al Natisone.
The area developed over thousands of years from dolostone material deposited along river valleys. Gravel dominates the surface, while individual vineyard descriptions also identify alluvial ground and, at San Giovanni al Natisone, marl-and-clay soils.
Temperature pattern
The gravelly surface contributes to a pronounced difference between daytime and nighttime temperatures. This thermal range is particularly favorable to aromatic grapes.
Vinificazione
The documented estate protocols employ mechanical harvesting for Chardonnay, Sauvignon and Refosco dal Peduncolo Rosso. Sauvignon and Chardonnay are trained to spurred cordon; Refosco dal Peduncolo Rosso uses Guyot and Cappuccina. The Sauvignon vineyard has a planting density of 6,000 vines per hectare.
White-wine protocol
The documented Chardonnay and Sauvignon processes begin with mechanical harvesting, followed by an eight-hour cold maceration in a horizontal press. The must is then clarified by settling. Fermentation takes place in steel at a controlled temperature of 15°C.
After fermentation, the wine remains without racking in the same vessel for approximately four months, held at a constant temperature. Bottling is followed by a further period of bottle maturation before release.
Red-wine protocol
Refosco dal Peduncolo Rosso is mechanically harvested and fermented on the skins at a controlled temperature of 23°C. It then matures in steel tanks for eight months at a constant 16°C. The wine is subsequently assembled and bottled, followed by additional bottle maturation.
