Vineyard and terroir
The Pinot Grigio grows in the delle Venezie subregion of Veneto. The Alps shelter the region from cold northern winds, and the Adriatic Sea borders it to the southeast. The soils are mainly gravel, clay and sandy clay.
Vinification
Harvest usually takes place in early September, when the grapes reach optimal ripeness. At the winery they are destemmed and crushed at low temperature with dry ice, which limits oxidation and preserves fruity flavours and aromas. Maceration lasts 12 hours at below 8 °C. The juice is separated from the solids by gentle pressing, and the must is clarified to remove coarser particles that could develop heavy, unpleasant aromas. Fermentation takes place in stainless steel tanks at a controlled 15–16 °C.
Ageing
After racking, the wine rests on its lees for 3 months.
