About this wine
Vineyard and terroir
The estate vineyards lie in the municipality of Verduno at an elevation of 340 metres. Their calcareous soils contain balanced proportions of clay, silt and sand. The geology is particularly complex, sitting at the meeting point of laminated Marne di Sant’Agata Fossili, the Cassano Spinola Formation and gypsum-bearing veins. The vines are Guyot trained.
Grapes
Sauvignon Blanc.
Vinification
Harvesting is performed by hand to maintain the fruit’s integrity and allow selection when necessary. The grapes are carried to the cellar in 20 kg crates, destemmed and gently pressed. In some vintages, part of the fruit may undergo skin maceration at controlled temperature. Cold static clarification precedes alcoholic fermentation in temperature-controlled steel tanks, an approach intended to preserve the variety’s aromatic character.
Ageing
Malolactic fermentation is prevented through the use of low temperatures. Maturation continues on the fine fermentation lees in stainless-steel tanks. Bottling normally takes place between late winter and early spring following the harvest.
Tasting profile
A fresh, incisive white with a saline, marine character. Aromas recall herbs, wild flowers and tart fruit, while the palate is refreshing and thirst-quenching.
Serving and pairing
Serve at approximately 10 °C.
Label / history
The name refers to ancient Rome, where viridis was the colour associated with the garments of the Naiads, the nymphs of fresh water.
