About this wine

Vineyard and terroir

The fruit is grown in the Salice Salentino area of southeastern Italy, in deep, dry clay and siliceous soils rich in carbonates. The local climate is very hot and dry despite the influence of the nearby Mediterranean Sea, with around 300 sunny days annually and average summer temperatures reaching 40 °C.

Grapes

The blend consists mainly of Negroamaro with a small proportion of Malvasia Nera di Lecce.

Vinification

The grapes are hand-harvested early in the morning in mid-September and taken directly to the winery for gentle pressing. The varieties are vinified separately. Fermentation takes place in temperature-controlled stainless-steel tanks, followed by ten days of maceration with daily pumping over. After malolactic fermentation, the separate wines are blended.

Ageing

The wine remains in stainless-steel tanks until June.

The wine takes its name from the small commune of Salice Salentino.
