About this wine
Vinification
The grapes are harvested at optimal ripeness and vinified at a modern sparkling-wine facility near Trento. The Glera is gently pressed, retaining only the finest fraction of the juice. After settling for 12 hours, the juice is transferred to stainless-steel tanks and fermented under controlled temperatures for approximately 15–20 days. The resulting wine is blended with traditionally vinified Pinot Nero, which contributes the rosé colour. A second fermentation then takes place in sealed pressurised tanks using the Italian Charmat method.
Ageing
The wine rests on its lees for 60 days in pressurised tanks.
Label / history
“Lunetta” means “Little Moon.” Cavit was founded in 1950 by winemakers in Trentino as both a community and a corporate group, intended to facilitate quality control and oversight of their wines. Based in northeastern Italy, it supports nearly 4,500 small wineries. Its vineyards total 7,000 hectares, and it produces 65% of the wine made annually in Trentino.
