About this wine
Vineyard and terroir
The vineyards lie around Mogoro and neighbouring villages. The soils are predominantly loose and calcareous, with some sandy areas. The Mediterranean climate has mild winters and hot summers, moderated by the salt-laden mistral wind. Average annual rainfall is 500 mm, and the vines average 30–40 years of age.
Vinification
The grapes are harvested at optimal ripeness from late September through the first ten days of October and carefully sorted at the winery. Fermentation lasts 15 days at a controlled temperature of 26 °C, followed by five days of maceration. Regular pumping over extracts aromatic and colour components.
Ageing
The wine ages for approximately eight months in oak barrels, followed by six months in stainless-steel tanks.
