About this wine
Vineyard and terroir
The vines are 20–25 years old on average and grow in clay and yellow-sand soils. Moderate temperature changes throughout the year shape the microclimate, while the vineyards’ exposure supports ripening and helps the grapes retain their structure until harvest.
Vinification
After harvest, the grapes are gently crushed in a horizontal press. The must settles at a low temperature before undergoing a traditional white-wine fermentation lasting approximately 12 days at no more than 18 °C.
Ageing
The wine rests in steel tanks before bottling.

Label / history
The Gattavecchi family has tended vines and made wine for four generations. The winery was completely destroyed in a bombing raid in 1944 and subsequently rebuilt through the efforts of Valentine Gattavecchi, beginning a new period for the estate. The Simonacci-Baroncello cellars and vineyards were also restored; they had belonged to monks of the “Padri Servit” monastery as early as the 12th century. The estate is now run by Valentine’s children, Luca, Gionata and Daniella, with guidance from their mother, Gianna.
