About this wine
Vineyard and terroir
The vineyards lie at 300–400 m and face from south to south-east. Their soils are rich in limestone and sandstone.
Grapes
100% Rossese bianco.
Vinification
The grapes are harvested and selected by hand at the end of September. A brief maceration takes place in the press, followed by malolactic fermentation in temperature-controlled stainless-steel tanks.
Ageing
After fermentation, the wine remains on its lees with frequent bâtonnage. The Italian description specifies maturation in wooden casks, a detail omitted from the English version.
Serving and pairing
Pair with shellfish, fish dishes and medium-aged cheeses.
