The grapes grow in volcanic soils rich in minerals and organic matter.
Grapes
A blend of three varieties: Montepulciano, Syrah and Cesanese. The text gives no proportions.
Vinification
The grapes are harvested by hand at optimal ripeness. At the winery they are carefully sorted and gently pressed. Each variety ferments and macerates separately in temperature-controlled stainless steel tanks.
Ageing
The wine ages for 12 months in oak barrels before bottling, then rests further in bottle in the winery's cellars. The text gives no length for the bottle rest.
