About this wine

Grapes

The blend comprises 90–95% Malvasia, with Grechetto making up the remainder.

Vinification

After harvest, the grapes are laid on reed mats beneath the roof and allowed to dry for approximately four months. Pressing takes place at the end of January using traditional manual presses.

Ageing

The resulting must is transferred to small casks called caratelli. The madre—a carefully preserved component of the traditional production process—is added, and the wine remains in the casks for at least seven years.

Technical data

Annual production is approximately 2,000 bottles.

Tasting profile

Deep, dense amber in appearance, with golden nuances and limited transparency. The intensely aromatic bouquet combines honey and vanilla with an underlying caramel character. Sweet, velvety, soft and dense on the palate, it achieves balance through the interplay of sugars, acidity and volatile aromas. It is presented as a meditation wine.

Label / history

Vin Santo is traditionally served by the families of the estate as a welcome to guests.
