Vineyard and terroir
Tempi comes from a 4 ha alberello-trained vineyard at 600 m above sea level.
Grapes
Sangiovese; the percentage is not specified.
Vinification
The grapes are harvested manually between the beginning and middle of October. Malolactic fermentation takes place in tonneaux. The wine is bottled without filtration, so deposits of natural tartrates may occur.
Ageing
Cellar maturation consists of 12 months in amphora followed by a further 12 months in cement. Bottle ageing lasts approximately 20–24 months.
