About this wine
Grapes
The blend comprises 85% Glera, in accordance with regional requirements. The remaining 15% includes Chardonnay, Pinot Bianco, Pinot Grigio, Pinot Nero vinified as white, Verdiso, Bianchetta and Perera.
Vinification
The grapes are harvested at optimum ripeness and gently pressed. After the skins are separated from the must, the clear juice is chilled and clarified. Fermentation takes place in stainless-steel tanks with a specially selected yeast strain for eight days at 16–18 °C. A second fermentation follows in an autoclave and is stopped at the required sugar level by lowering the temperature to 8–12 °C.
