Vineyard and terroir
The Nebbiolo grows in Ghemme, on fluvial-alluvial clay soils that are particularly acidic. This acidity plays a key role in the freshness and purity of the grapes. Yields are limited to 50 cwt/ha, and the grapes are harvested entirely by hand.

Nebbiolo from Colline Novaresi has high acidity and a delicate structure, which suits light, elegant rosé wines.
Vinification
The berries are gently pressed. The must ferments at low temperatures in steel.
Ageing
The wine ages in stainless steel tanks, which keep its natural freshness and lightness.
