About this wine
Vineyard and terroir
The Pecorino grows on southeast-facing hills at approximately 200 m above sea level, in clay-limestone soils. The regional climate promotes good ripening and contributes to refinement and minerality.
Vinification
The grapes are harvested by hand during the second ten days of September, then macerated for one day in stainless-steel tanks at a very low, controlled temperature.
Ageing
The wine rests on fine lees in cement tanks for two months. After bottling, it matures for a further two months in the winery’s cellars.
