About this wine
Vineyard and terroir
The fruit comes from an old, Tendone-trained vineyard at altitude, with a wide temperature range and good exposure. The grapes are grown using certified organic methods intended to minimise environmental impact.
Vinification
The grapes are harvested by hand in early September. Vinification takes place in temperature-controlled stainless-steel tanks, with fermentation below 16 °C. The wine is bottled without exposure to oxygen.
Ageing
The wine rests for three months in concrete tanks before bottling.
